The best advice I ever got on salad making is to treat a salad the same way you’d treat nachos. Nachos use chips as a base and are covered with so many other delicious things that make the meal worthwhile.
I’ve applied this advice to all my salad making so here’s how I assemble a salad.
My Salad Formula
Salad greens: I love arugula or spinach but will use just about any dark leafy green
Warm grain: brown rice, black rice, quinoa—never white rice
Cooked vegetable: usually steamed broccoli but whatever I have
Raw vegetable: tomatoes, cucumber, avocado, etc.
Sweet potatoes: they’re their own category since I have to have them in almost every salad
Protein: this can be a crumbled faux-meat, chickpeas, cubed tofu, sunflower seeds, etc.
Dressing: a salad dressing of your choice
This combination will give you a balanced, flavorful, and filling salad every time. It’s the best way that I’ve found to make salads a meal to look forward to instead of something you’re doing for your health.
