Recipe: Vegan Chicken Salad
No cooking required and it honestly tastes just like the real thing.
My family’s staying with me this week and I’m trying to decide what to cook.
I want the dishes to be quick so I’m not spending too much time in the kitchen, affordable so I’m not spending too much money, but also delicious so they continue to think positively of vegan food.
One of the recipes that fits this description perfectly is this vegan chicken salad. It’s honestly a regular chicken salad recipe I found on the Spend with Pennies blog just using vegan ingredients.
I’ve given samples of this chicken salad to thousands of non-vegans and they all say they wouldn’t be able to tell it was vegan if I didn’t let them know. If you or your loved ones are a fan of chicken salad, this is definitely worth trying!
Vegan Chicken Salad
2 cups vegan chicken (Sweet Earth and Tofurkey’s vegan chicken doesn’t need to be cooked before serving)
½ cup vegan mayonnaise
1 stalk celery chopped
1 green onion diced (or chives or red onion)
1 teaspoon dijon mustard
½ teaspoon seasoned salt
pepper to taste
1 teaspoon fresh dill
Combine all ingredients in a small bowl and mix well. Season with salt and pepper to taste. Serve as a sandwich or over salad.
