An easy and refreshing salad for the warm days ahead of us. Eat it plain or add it as a raw addition to any salad.
Thai Cucumber Salad
1 large or 2 medium cucumbers
1/4 medium onion – finely chopped
2 scallions – sliced into 1/2″ lengths
1/4 cup cilantro – chopped
2 tablespoons lime juice
1 teaspoon brown sugar
1 tablespoon sesame oil
1 tablespoon safflower oil
Salt and pepper
2 tablespoons sesame seeds – lightly toasted
