I can’t get enough of this simple (but delicious) vegetable soup.
Aside from the flavor, the best part about this soup is the infusion of plant-based protein. I put quinoa into so many of my dishes throughout the year and it’s such a nice addition to any soup.
I added an extra garlic clove and used Better than Bouillon in place of veggie broth but followed the rest of the recipe as-is. Feel free to use any veggies you have and omit any veggies you don’t—this dish is very forgiving.
